Apple and Blackberry Cake Recipe

Fundraising Manager Jill Blane explains how foraging and cooking is such a positive way to help their young people: “At Jamie’s Farm, we give young people the chance to experience a healthy diet full of great food. Our cooking sessions start with a trip to the garden where we pick armfuls of produce before taking it back to the kitchen. This gives young people a better understanding of where their food comes from.”

Using the farm’s fresh ingredients, our generous friends at Jamie’s Farm have created and shared a delicious cake recipe that you can try at home. Brimming with foraged blackberries and juicy green apples, it’s a tasty treat that’s incredibly easy to make and serves 12 people.

Ingredients:

280g plain flour (or spelt)

½ tsp ground cinnamon

½ tsp baking powder

¼ tsp bicarbonate of soda

120ml extra virgin olive oil

160g golden caster sugar

½ tsp vanilla extract

3 free-range eggs

4 large Granny Smith apples, peeled, cored, and cut into 1.5cm chunks

2 handfuls of foraged blackberries

½ lemon, grated zest

Pinch of salt

 

Essential kit:

You will need a greased 20cm spring-form cake tin lined with baking parchment.

 

Method:

  1. Preheat the oven to 190°C/ 170°C fan/gas mark 5.
  2. Sift together the flour, cinnamon, salt, baking powder, and
    bicarbonate of soda and set aside.
  3. Put the oil, sugar and vanilla in a mixing bowl. Using an electric
    mixer (or whisk), beat until smooth, then add the eggs one at a time and beat for several minutes until the mixture is light and fluffy.
  4. Mix in the diced apples, blackberries and lemon zest. Lightly fold the ingredients into the wet mixture.
  5. Pour the batter into the lined tin, level it with a spatula, and place in the oven. Bake for around 1 hour (check after 50 minutes), until a skewer inserted into the centre comes out clean.
  6. Remove from the oven and after a few minutes, place the cake onto a wire rack to cool.
